I don’t think you will see the increased service fees and occupancy taxes and fees but the guest does. Just like the guest won’t see that your $10 pet fee (for example) only nets you an additional $9.70 in your payout.
This doesn’t answer the question though. A host may or may not know the guest is bringing a pet. Sometimes there is a toggle for guests to indicate that but not always, depending on app or browser as well as how they went in to look at that listing. I’d guess that maybe 5-10% of my guests with pets actually had that option toggled on when they booked.
