We are wanting to add a two hour boat tour for an additional fee.Can’t find how to do that on Airbnb site. Can I send emails to already registered guests of this new offer.

You really can’t.
You would have to add something to your description explaining the option and the cost. Then ask them, when they contact you, to mention that they DO want a boat trip. Then you would send them the special offer.
Maybe you could list it separately as an experience. Airbnb offers those as well.

I offer firewood, but am not going to complicate things by putting it thru Airbnb, people can pay me cash or e transfer. It’s described on the listing.
Yeah, prepayment isn’t possible unless you include in room rate or cleaning fee. However, “Send or Request Money” Option is offered for already booked guests.

Why do you want AirBnB to get a service fee for your boat tour for guests that have already booked?
Have you thought about something like PaytPal or Square to run credit cards for you in case a guest does not want to pay cash?
Our housekeeper cooks meals for people and they pay her directly in cash while they are there (we haven’t figured out how to process credit cards in St Lucia yet, but we’re working on it). Never would I dream of running it through AirBnB. If they don’t want to pay her cash, they can cook their own meals or eat at a restaurant.
I wasn’t sure of the procedure. I didn’t want to do something outside of Airbnb rules.

AirBnB wants you to charge as much as possible through their platform so they get a fee on it.
I believe that, as long as you keep the rental transaction through the platform, you are following the rules. You can’t ask for more money as rent other than what was done across the platform, another security deposit, a fee for utilities or cleaning that was not part of your listing price or an additional deposit for keys or linens, etc. But if you offer optional services such as cooking or boat tours or giving them rides, I would believe that is OK to do the transactions offline from AirBnB.
You may want a contract for those other transactions, though. For instance, you may want them to sign a liability waiver for the boat tour. It is possible that AirBnB would cover you with liability insurance for the boat tour if you charge for it through AirBnB and they get their service fee. But you need to do a lot of research before you count on that.
My contract specifically states that I am not party to the agreement for the services our housekeeper provides for cooking. You’ll have to consider the importance of a contract for the boat tours and how to set it all up.
