how does it work with your manager? Do you hand over the property listing to them? Who’s name is the account in? I notice there are restrictions on the number of co-hosts a manager can have? Does the payout go to them and they pass it on minus their cut? What is the usual procedure?

I would never hand over my listing to a manager. It should be in your name so that if you decide to manage it yourself or hand it over to someone else you retain the listing, reviews and ratings.
Not sure how many co-hosts you can have - I think there is information about co-hosts on Airbnb Help Centre.
I would imagine you decide how much the manager is paid and pass it onto them.
Do make sure you have a contract with your co-hosts outlining responsibilities, payment terms any targets in terms of ratings etc.
Make sure you take up current references.
