The most likely culprit is your water.

Ideal brew temp is 196 - 204 F. Too hot or too hold can result in bitterness.

Mineral Content in your water has a DRAMATIC impact on “the cup”. Your water supply may have too many minerals, bad minerals, or the wrong combination of minerals.
It is pretty easy to experiment - try using some quality spring water and see what that does for you.
Oh - and always run a quick flush after a brew cycle - it helps avoid most of the buildup in the brew head.
It’s never had anything other than spring water in it and the temp is circa 94c.
