Wanted to change our listing from a 3 day min to 2 but windows computer would not let me edit. However the edit feature was still available on my android phone. Researched this on AI and found that thousands of others were complaining about this but there was a workaround which I successfully followed. Why does airbnb make things so difficult for us hosts?

I use an Apple MacBook Air and I have never encountered any difficulties editing on the Airbnb site. In fact I use my laptop for doing 99% of my Airbnb work, be it editing my listing, booking, answering and sending messages, adjusting my calendar and prices, etc. I find that a larger screen and a full size keyboard are much easier to use than looking at 6" screen on my phone. I have never, ever had to use a workaround.
I can’t tell you why you are having problems with your windows computer as I am PC challenged. Could it be the operating system version? I have spoken with numerous hosts in my area and I have never once heard anyone complain about issues when using their Windows pc. I wish you luck in resolving your problem. If I had to do all my Airbnb editing on my phone I’d probably leave the platform before I went crazy.
I also have a Windows PC and have never found it difficult to edit or change settings.
Occasionally there are glitches, but those seemed to resolve themselves within a few hours. Not too long ago one night I was trying to respond to a guest message, but kept getting a pop-up saying “This message can’t be found”, even though the message was sitting right there on the screen in front of my eyes. Luckily it wasn’t anything urgent, and when I tried it again in the morning, it worked fine.
