It’s a pretty easy way to avoid that problem - just to not use Airbnb anymore.

Using an Airbnb supplied number means your calls are going over their network.
Is there any mention of privacy or end to end encryption?
If there’s no encryption then using speech to text and AI they can then do whatever they want with the contents of your calls.
This is not being done for your benefit.
I hope this stays optional, I would never opt in to such an invasion of privacy.

Brand attachment/loyalty is a thing but I would say Airbnb is not Apple.
