Update, the pinch-fingered guests left, providing an excellent rating and some well-intentioned but not practical additional improvement suggestions by private message. All’s well that ends well.
I realized I can replace the door handles with some plastic-coated garage hooks I already have that will protrude past the door jamb on either side of my pocket door. They’re not designed for lateral force but the door is light and moves easily. Or these would be fun:
